Ingredients (Makes 8β10 cookies)

1Β½ cups rolled oats

Β½ cup wholemeal flour (or oat flour)

ΒΌ cup coconut oil, melted

ΒΌ cup unsweetened apple purΓ©e or mashed ripe banana

1 tsp vanilla extract

Β½ tsp baking powder

A pinch of sea salt

Β½ cup fresh or frozen berries (blueberries, raspberries, or strawberries, roughly chopped)
Method

Preheat oven to 170Β°C (fan-forced). Line a baking tray with baking paper.

In a large bowl, combine oats, flour, baking powder and salt.

Add melted coconut oil, apple purΓ©e and vanilla. Mix until a soft dough forms.

Gently fold in the berries, taking care not to over-mix.

Spoon the dough onto the tray and lightly press into soft rounds.

Bake for 12β15 minutes, until just set and lightly golden around the edges.

Allow to cool slightly β the cookies will remain soft as they set.
