Gut Lovin' Sauerkraut Brownies
You would never have thought to put sauerkraut into a brownie – but it works! Sauerkraut is rich in probiotics because it contains live beneficial bacteria which can help to support your gut microbiome balance. Add in more gut-friendly ingredients such as walnuts, almonds and mixed seeds – and you have yourself a tasty and nutritious treat that will support your gut, immune and digestive health.
Gut Lovin' Sauerkraut Brownies
Ingredients:
- 400g pitted dates
- 1 tbsp boiling water
- 80g ground almonds
- 80g mixed seeds
- 60g sauerkraut, finely chopped
- 3 tbsp cacao powder
- ½ tsp sea salt
Topping:
Handful of pecan nuts
Dusting of cacao powder
Directions:
Finely chop the sauerkraut.
Add the dates, ground almonds, cacao powder, water, and salt to a food processor. Blend until the mixture is sticking together. Stir in the sauerkraut.
Line a loaf pan with baking paper. Transfer the brownie mix and press firmly into the dish with your hands until evenly distribute. Once the mix is evenly spread out, press pieces of pecans into the top of the brownies.
Place in the fridge to allow the brownies to set for 30 minutes.
Remove from the fridge and cut into squares to serve. Enjoy!
