High Fibre Muffins
This recipe makes for a tasty and nutritious addition to the kids’ lunchbox or take them to work for a healthy snack. It contains probiotic foods such as bananas, yoghurt, almonds and pumpkin seeds to support healthy digestion and gut microbiome balance. Your gut will thank you for it!
High Fibre Muffins
Ingredients:
• 2 large bananas, mashed
• 2 large eggs, lightly beaten
• 125mL maple syrup or runny honey
• 75mL vegetable or other neutral oil
• 75mL Greek yoghurt
• 1 tsp vanilla extract
• 250g wholemeal flour
• 50g rolled oats
• 2 tsp baking powder
• ½ tsp cinnamon
Toppings:
• Almonds, chopped
• Pumpkin seeds
Directions:
Preheat oven to 180 degrees Celsius (or 160 degrees fan forced)
Line 12 muffin cases into muffin tin
Combine the banana, eggs, maple syrup, oil, yoghurt and vanilla until smooth
In a separate large bowl, mix together dry ingredients flour, oats, baking powder and cinnamon
Pour in the wet ingredients and stir together until well combined
Divide the mixture between muffin cases
Sprinkle over chopped almonds and pumpkin seeds
Bake in the oven for 20 – 25 minutes until cooked through. Enjoy!
