Energy Breakfast Bar

INGREDIENTS
1 cup pitted dates
11⁄2 cups GF rolled oats
3/4 cup roughly chopped nuts
1⁄4 cup pumpkin seeds
1⁄4 cup chopped cranberries
1/3 cup honey (or agave/maple syrup if vegan)
1/3 cup peanut butter or almond butter
3 capsules Lifestream biogenic Ginger
2-3 tsp Lifestream Essential Berries
1-2 tsp Lifestream Spirulina
1-2 teaspoon Chia seeds (optional)
1⁄2 tsp cinnamon
pinch nutmeg
1 tsp vanilla extract
DIRECTIONS
Line a 9×9 inch baking tray with cling film (plastic wrap), set aside
Put the dates into a food processor, and process until the dates form a sticky dough-like ball
In a large bowl, combine the date “dough” with the oats, almonds, walnuts, pumpkin seeds, cranberries, Lifestream Essential Berries and Lifestream Spirulina. Set aside
In a small saucepan, melt together honey, peanut butter, con- tents of Lifestream ginger capsules, cinnamon, nutmeg, vanilla over a low heat, stirring constantly
When the honey-peanut butter mix is warm and well mixed, pour the mixture over the date-oat mix
Stir thoroughly until fully combined (or mix with your hands), press into the 9×9 inch baking tray, and chill in the fridge for at least 20 minutes
